Chicken Broccoli Casserole


This is Yummy!  Serves 10. 1 hour prep.
1 whole chicken  (I used 4 chicken breasts)
1 large head broccoli (I used 3 small)
2 cups uncooked rice
1 can Cream of Mushroom (or broccoli) soup
1 can Cream of Chicken soup
1 c. mayo
1/2 grated onion
1 c. shredded cheddar
2 c. buttered bread crumbs
1/2 tsp salt
1/2 tsp pepper

Boil or brown chicken to cook.  Remove and set aside.
Cook broccoli for 5 minutes till tendercrisp. Remove with slotted spoon and set aside.
Cook rice in broccoli water (make sure have enough water) for 20 minutes or until done.
Mix chicken, broccoli, rice, soups, mayo, onion, salt & pepper.
Top with cheese and bread crumbs.
Bake 350 until cheese is melted and casserole is heated through, about 30 min.

I used the same pan for cooking, mixing, and baking.  One pan- gotta love Ameriware!!
